Could someone please advise how many times would the pedal have to be pumped whilst the engine is running to deplete the pressure in the braking system accumulators of a late model SS2

An infinite number, as you need to have the engine off but the ignition on, to light up the warning lamps. Then just pump the brake pedal till the lights come on for both systems. If they are in good order could take 20 or more pumps. Anything less that 10 means you should seriously examine, and probably overhaul your whole system, particularly the accumulators.
