I suspect that my thermostat is stuck in the open position. Other than removing it, am I right to assume that the way to check this is that the upper hose will warm up immediately after starting the engine?

The top hose will get mildly warm as the engine heats up, and when the thermostat opens it will suddenly get too hot to hold.
